Keeping Scandinavian tradition alive

Community volunteers, mostly from the local Sons of Norway, Vinland Lodge 1-193, and the Family and Consumer Science students from Falls High School, taught by Marva Fairchild, recently spent a couple of days making lefse. The traditional soft, Norwegian flatbread is made out of potato, flour, and milk or cream, and cooked is on a griddle. Lefse is a Scandinavian treat that is especially popular around the holidays. Many Scandinavian Americans eat lefse primarily around Thanksgiving and Christmas. Family members often gather to cook lefse as a group effort and make the event a traditional holiday activity. Adult volunteers included Craig Moe, Mary Moe, Lyle Windsness, Dick Bergh, Pat Ettestad and Gordy Ettestad. Students are pictured with adult volunteers Pat Ettestad and Mary Moe.
